The more heavy cream you add, the creamier and saucier the Creamy Cajun Pasta over Linguine becomes. I love the sauce. I substitute Creole Seasoning, Tony Catcher's, for Cajun, as that is my personal preference.

Remember to cook the pasta in a separate pot of boiling salted water until al dente.
Serves 2 when using 4 oz of linguine al dente & 2 chicken breasts

Serve over hot linguine and sprinkle with Romano or Parmesan Cheese.

INGREDIENTS:

2 boneless skinless chicken breast halves, cut into thin strips or bitesize cubes/chunks
4 ounces linguine, cooked al dente
2 teaspoons cajun seasoning (or Tony Catcher' Creole Seasoning)
2 tablespoons butter
1 thinly sliced green onion
3/4 to 1 cup heavy whipping cream
2 tablespoons chopped sun-dried tomatoes
1⁄4 teaspoon salt (taste in pan before adding)
1⁄4 teaspoon dried basil
1⁄8 teaspoon ground black pepper
1⁄8 teaspoon garlic powder
1/4 cup grated parmesan cheese
