  • 1/3 cup oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh lemon juice
  • 2 pounds shrimp, peeled and deveined, tails on if desired
  • chopped fresh parsley, optional

Heat the oil in a large skillet over medium heat. Add the garlic, salt, pepper, and lemon juice and mix well.

Add the shrimp. Cook, stirring occasionally, until the shrimp is cooked and the liquid has evaporated from the pan (4-6 minutes depending on the size of the shrimp). Sprinkle the shrimp with parsley and serve immediately.
