  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • freshly ground black pepper, to taste
  • 4 beef fillets, about 6 ounces each
  • salt, to taste

***Mushroom-onion Topping***

  • 1/4 cup butter or margarine
  • 1 yellow onion, sliced and separated into rings
  • 4 green onions, including some tender green tops, sliced
  • 1/2 pound fresh mushrooms, sliced
  • 3 tablespoons chopped fresh parsley
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon red wine, optional
  • 1 teaspoon soy sauce
  • salt and freshly ground black pepper, to taste

Preheat broiler.

In a small bowl stir together oil, garlic, and pepper. Brush mixture on both sides of fillets. Place fillets on broiler pan. Broil, turning once, 5 to 6 minutes on each side for medium-rare.

Transfer to warmed platter or individual plates and season with salt. Top with Mushroom-Onion Topping and serve immediately.

For Mushroom-Onion Topping: In a skillet, over medium-low heat, melt butter.

Add onions and saute stirring frequently, 3 minutes. Add mushrooms and parsley and saute until vegetables are tender, about 5 minutes longer. Add Worcestershire sauce, wine, soy sauce, salt, and pepper and saute until ingredients are blended, 2 minutes longer.
