Beef Stock

Ready in: > 5 hrs
- 3 pounds beef soup bones
- OR
- 1 pound bone-in beef
- 1 onion, chopped, more as desired
- 2 stalks celery, chopped
- 2 tablespoons dried parsley flakes
- 2 whole peppercorns
- 2 teaspoons salt
- 8 cups water
Place all ingredients in slow cooker. Cover and cook on Low for 12 to 24 hours or on High for 4 to 6 hours. If cooked on High, the stock will be lighter in color and less concentrated. Strain and refrigerate. Keeps well 4 to 5 days, or may be frozen.
