Best Broccoli Cheese Soup

- 1/2 cup chopped onion
- 1/4 cup butter or margarine
- 1/4 cup all-purpose flour
- 3 cups water
- 4 teaspoons instant chicken bouillon granules
- 2 packages (10 ounce size) frozen chopped broccoli, thawed and drained
- 3 cups shredded cheddar cheese
- 2 cups half-and-half
Combine the onion and butter in a large saucepan. Cook over medium heat until the onion is soft. Stir the flour into the onions and mix well. Slowly stir in the water until the mixture is smooth. Add the chicken bouillon granules and broccoli. Cook, stirring, until thickened and broccoli is heated through. Add the cheddar cheese and stir to combine. Slowly add the half and half while stirring. Cook over medium heat until the cheese is melted and everything is heated through. Do not let the soup boil or it may curdle. Serve the broccoli cheese soup while hot.
