Broccoli & Cheese Soup


broccoli (I use 2 "bunches")
1 med. carrot shredded
1/4 c. celery chopped fine (I use 1 rib)
2 1/2 c. water
2 chicken boullion cubes (I use 3)
3 Tab. butter
3 Tab. flour
salt & pepper to taste
2 c. milk
1 cup shredded cheese (I use mixture of sharp cheddar & velvetta)
1/2 to 1 tea hot sauce
In large saucepan, combine water, boullion cubes, carrot and celery. Bring to boil. reduce heat, cover and simmer 12 to 15 min. DO NOT DRAIN. I add the broccoli now so it won't get so mushy.
In another saucepan make cheese sauce using butter, flour and milk (you want this really thick) add hot sauce to cheese sauce. Stir cheese sauce into water with the veggies.
