French Fried Pickles Using Pancake Mix

- 1 cup pickle slices
- salad oil
- 3 tablespoons milk
- 1 egg, slightly beaten
- 1 tablespoon pickle juice
- 1/3 cup dry pancake mix
Place the pickle slices on paper toweling to dry. Heat the oil in a deep fryer (or heat 1-inch of oil in a deep skillet) to 360 degrees F. Combine the milk, egg, and pickle juice in a shallow dish. Stir in the pancake mix. Dip the pickle slices in the pancake mix, coating completely and letting any excess drip off. Add the coated to the hot oil and cook, turning as needed, until golden brown. Remove from the oil with a slotted spoon and let drain on paper toweling. Serve the french fried pickles hot with your favorite dipping sauces (delicious with ranch dressing).
