- 2 cups granulated sugar
- 6 tablespoons cocoa powder
- 3/4 cup cold water
- 1/2 cup butter, cut into bits
- 1 teaspoon vanilla extract
Combine the sugar, cocoa powder, and water in a heavy saucepan over medium heat. Bring the mixture to a boil, stirring constantly. Cook until the sugar dissolves and it is it a rolling boil. When boiling, add the butter. Cook until the mixture reaches 234 degrees F on a candy thermometer. Remove the pan from the heat and let cool. Add the vanilla extract and beat vigorously for 5 minutes or until the fudge thickens. Pour into a pan lined with buttered foil or drop by spoonfuls onto waxed paper. Let stand until firm.
