Serves/Makes: 4
Ready in: < 30 minutes
- 4 pork chops (1/2-inch thick)
- 1 package (1.25 ounce size) taco seasoning mix
- 4 cups refrigerated diced potatoes
- 2 tablespoons vegetable oil
- 1 jar (16 ounce size) salsa
Sprinkle the pork chops with some of the taco seasoning mix. Combine the remaining seasoning mix and potatoes in a zip-top bag. Seal and shake to coat the potatoes evenly. Heat the oil in a large skillet over medium-high heat. Add the pork in a single layer. Cook for 3 minutes per side. Top each pork chop with a portion of the potatoes. Drizzle the salsa over all. Reduce the heat to low. Cover the skillet and cook for 12-15 minutes or until the pork is cooked through and the potatoes are heated. Serve the pork chops with the potatoes and salsa.
