Church Brunch Breakfast Casserole

Ready in: 1-2 hrs
- 24 eggs
- 2 cups sour cream
- 2 cups chopped green onion
- 2 pounds diced turkey ham
- 1 can (10 ounce size) diced Rotel tomatoes
- 1 can (15 ounce size) stewed tomatoes
- 1 box (2 lb size) Velveeta cheese, cubed
- 1 tablespoon black pepper
- 1/2 cup black olives (sliced)
- 10 slices tomatoes for garnish
- 1/2 cup grated cheddar cheese
Combine all ingredients and bake in a greased (very large) casserole pan at 325 degrees F for one hour or until center is firmly set. You can make this the night before and place in a 250 degrees F oven 30 minutes before serving. Freezes well.
