1 lb smoked sausage, cut into bite size pieces
1 large onion, chopped
6 russet potatoes, cut into cubes
1/2 cup water
1 tsp salt
1 tsp pepper
1 tsp garlic powder
vegetable oil or bacon grease for frying
1. Cut sausage into bite size pieces. Drizzle some oil in a large non stick skillet and sauté sausage until well browned.
2. Meanwhile, peel potatoes and cut into 3/4 inch cubes.
3. Add potatoes, onions, 3-4 Tbsp oil, water, salt, pepper, and garlic powder, then stir well.
4. Once water starts to boil, cover and reduce heat to medium-low and simmer for about 10 minutes. Using a spatula to scrape the bottom, flip tators and sausage once or twice to prevent sticking.
5. Remove lid and increase temp to medium-high. Continue cooking for 10 minutes until tators are tender and some crisp edges. Use spatula to FLIP sausage and potatoes and scrape bottom to allow oil to crisp them up some more. DON'T STIR potatoes or they will fall apart!
6. Serve immediately.
