Louisiana Pork Chops

- 4 pork chops, 3/4-inch thick, any excess fat removed
- 1/4 teaspoon black pepper
- 1/4 teaspoon white pepper
- 1/4 teaspoon cayenne pepper
- salt, optional
- 1 tablespoon butter or margarine
- 1 can (14.5 ounce size) diced tomatoes with garlic & onion
Season the pork chops with the black pepper, white pepper, and cayenne. Add salt if desired. Set the pork chops aside. Heat a large skillet over medium-high heat. Add the butter. When melted, add the pork chops and cook for 5 minutes without turning. Turn the pork chops and cook for 4 more minutes. Remove the pork chops from the skillet and drain off the excess grease. Return the skillet to the heat and add the tomatoes. Place the pork chops on top of the tomatoes and cook for 10 minutes or until the pork is cooked and the sauce has thickened a bit. Serve the pork chops with the tomatoes.
