Chicken Cacciatore
Serves - 04
Ingredients
4 skinless chicken thighs
½ tsp. kosher salt
½ tsp. fresh cracked black pepper
¼ C. all purpose flour
2 tbsp. olive oil
1 large green bell pepper - thinly sliced
1 large onion - thinly sliced
½ lb. portabella mushrooms - sliced
3 large clove garlic - minced
½ C. dry white wine - Chardonnay
1-28oz can diced tomatoes
½ C. chicken broth
½ tsp. red pepper flakes
½ tsp. garlic powder
½ tsp. onion powder
1½ tbsp. Fresh oregano - chopped
2 tbsp. fresh basil - chiffonade
1 lb. ziti
Directions
Wash and pat the chicken dry then sprinkle each piece with salt and pepper then dredge the chicken pieces in the flour to coat lightly.
In a large sauté pan over a medium-high heat add the oil and when hot add the chicken and sear until browned on all sides, about 8 to 10 min. remove and set aside.
Now to the same pan reduce the heat to medium and add the bell pepper and onion, sauté until the onion become translucent stirring occasionally, about 5 min. Add the mushrooms and cook uncovered stirring occasionally until the mushrooms begin to brown. Now add the garlic and cook until fragrant about 30 sec.
Now add the wine and cook until reduced by half. Add the tomatoes, broth, red pepper flakes, garlic powder and onion powder, return the chicken and simmer for 20 min. Remove from heat and add the oregano and basil, check for seasoning, drizzle with olive oil, and serve.
Cook the ziti according to package directions.
