Prep Time: 10 Min Cook Time: 2 Hours Total Time: 2:10
Ingredients:
4 Lb Onions slice pole to pole
4 TB Butter
1 TSP SUgar
1 TSP Salt
8 Cups Beef Broth
2 Bay Leaves
1/2 TSP Dried Thyme
Slices of Swiss Cheese as needed
Croutons:
1/2 Loaf of French Baguette
1/ TSP Salt
3TB Olive Oil
Directions:
Soup:
In Dutch Oven melt Butter on Medium High fire
Add Onions, Sugar, and Salt
Toss to coat, Cover, and cook 20 minutes
Uncover and cook 5 to 10 minutes to dry liquid
Lower fire to Medium and cook 30 to 40 minutes, stirring often (should brown and reduce)
Add Beef Broth, Bay Leaves and Thyme
Bring to boil and lower heat a simmer
Simmer for 30 minutes
Croutons:
Preheat oven to 350°
Either Slice Baguette or cut into 1/2" Croutons(easier to eat)
Place on baking sheet and toss with Olive Oil and Salt
Bake in Oven for about 15 minutes
Remove and raise oven to 425°
Assembly:
In onion crock or oven proof bowl place a slice of Swiss cheese in bottom
Add Soup to fill about 3/4 of bowl
Add slice of cheese on top if desired
Add slice of Baguette or croutons to cover top
Add slice(s) of cheese on top as desired (I like lots of cheese)
Place on baking sheet and bake until bubbly and cheese is melted the way you like it (5 - 10 minutes)
