Preheat oven 400
1 9" pie plate
crust for two crust pie.
4 cups canned tart cherries, drain and save juice
1 cup granulated sugar
pinch of salt
3 tablespoon cornstarch
1/4 teaspoon almond extract
1/4 teaspoon red food coloring
2 tablespoons butter
Crust for two crust pie
Mix 1/4 cup sugar, salt and cornstarch.
Add 1/4 cup of the cherry juice. Mix well and set aside (make sure cherry juice is room temperature or cold)
In a saucepan, mix 3/4 cup sugar and 1/2 cherry juice and bring to a boil.
While boiling slowly add the cornstarch mixture and stir constantly.
Cook until thick and clear.
Fold in the cherries and almond extact and butter.
Let cool slightly
Pour into bottom crust
Top with top crust and crimp around the edges to seal. Cut slits in top crust to let steam escape.
(Can brush top crust with beaten egg)

If edges of crust are getting to brown, cover edges with foil.
