Ingredients
2 small lemons
1 garlic clove
2 teaspoons crushed dry oregano
1/2 cup good virgin olive oil
1 bag 5.5 oz mixed greens or baby spinach with mixed greens
2 green onions, chopped
1/2 cup pitted kalamata oilves
2 medium tomatoes cut into 8 wedges
1 seedless cucumber peeled and sliced (if you want to use a regular cucumber, remove the seeds)
1 green pepper, seeded and chopped
1/4 cup feta cheese
salt and ground black pepper
Squeeze the lemons into a large salad bowl removing any lemon seeds.
Stir in garlic and oregano
Slowly add the olive oil, whisking briskly to emulsify.
Add the salad greens, onions, tomatoes, cucumber, green pepper, olives, feta, and salt and pepper. Toss and serve.
