Sloppy Joes with Chipotle

Ingredients

1 pound of lean ground beef
1 medium onion chopped
3/4 cup ketchup
2/3 cup frozen corn or canned corn drained
1/2 c canned black beans, drained and rinsed
1/2 cup tomato sauce
1 teaspoon minced chipotle pepper with some of the adobo sauce (or more if you like the heat)
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/2 cup fresh cilantro leaves, chopped
6 sandwich buns

In a skillet, brown the meat and onion. Cook until meat is not longer pink. If it has any grease in pan, drain the grease from the meat

Stir in the ketchup, corn, beans, tomato sauce,chipotle pepper,cumin and salt.
Cook 5 minutes, stirring frequently.
Remove from heat and stir in cilantro.
Serve on buns.

(You can freeze the rest of the chipotle sauce for later use. If you want to make in a crockpot, put all ingredients, except clilanto, in crockpot on low *after you brown the meat.)
* make sure meat is cooked before adding to crockpot.

I've tried many recipes, this is the best. I once 'dec-tupled' (10x) this recipe to sell sandwiches at a craft fair at my church. People were waiting in line to buy leftovers. Freezes well, goes up
