- 3 pounds pork butt roast
- 4 cloves garlic, cut into small slivers
- 1 fresh whole jalapeno pepper
- 1 bunch fresh cilantro, chopped
- 1 can (12 ounce size) beer
- corn tortillas, steamed
With a small knife, cut slits into the roast. Insert the garlic slivers into the slits. Place the roast in the crock pot. Add the whole jalapeno, chopped cilantro, and beer to the crock pot. Cover the crock pot and cook on high for 4 hours or until the meat is fork-tender. Remove the meat from the crock pot and shred using two forks. Serve the shredded pork in the steamed tortillas with any desired toppings such as chopped tomato, diced onion, or shredded cheese.
