You'll need to chill the grits overnight before making this.

3/4 cup grits
1 lg egg
2 Tbsp oil
1/2 lb bacon
1/4 cup flour
Syrup

Cook grits according to directions. When cooled slightly, press into loaf pan. Chill overnight.

In the morning turn out the grits and slice like bread, about 1/3-inch thick slices.

Fry the bacon. Set aside. Add oil to bacon fat. Coat the grits slices with beaten egg, then flour. Fry in the oil and bacon fat until browned.

Serve with breakfast syrup or molasses and bacon.
