Serves 6 - 8
About 4 cups mashed cooked pumpkin
1 pint heavy cream OR sour cream
2 slices crumbled bacon
2 Tablespoons bacon drippings
Salt & Pepper as desired
1 minced garlic clove
1 cup diced onion
About 2 cups chicken stock or broth
Fry the bacon, then remove meat from pan saving grease. Fry the onion in the bacon grease, adding the garlic when it's almost done. Then mix all ingredients in a stockpot or Dutch oven and simmer together. Add more chicken stock/broth or milk as desired for thinning. It should be the consistency of a thicker chowder. Garnish with a dollop of sour cream, bacon bits, and a sprig of parsley if desired. Serve hot with French Bread.
Options: Add a half-cup mashed potatoes mixed with a half-cup of milk.
