1 stick butter
1 tsp baking powder
2/3 cup cold milk
1 cup flour
1 cup sugar
Pinch salt
Canned or cooked fruit for filling
Melt the butter in an iron skillet. Then in a bowl mix the flour, sugar, baking powder, milk, and salt. Blend well. Pour mixture over the butter in the skillet. DO NOT STIR! Your batter should be surrounded by melted butter but don’t worry, it will not be too greasy.
Now top the batter with cooked fruit, drained canned peaches, or even pie filling with minimal juice. Spread the fruit evenly as you add it. DO NOT STIR! If using non-sweetened fruit, dust the top lightly with a sprinkling of sugar.
Bake at 400 for about 40 minutes.
Serve hot with ice cream and coffee.
