Serves 2
2 butternut squash, halved and scraped.
4 Tbsp. butter, cut into 4 pieces
Brown Sugar
Maple Syrup – natural is best
Preheat oven to 400ºF. Wash and cut squash in half lengthwise. Scrape out the seeds and strings. Place squash skin-side up onto a cookie sheet. Bake for an hour. Turn skin side down. Place the butter inside the well where the seeds were, then sprinkle with a light coating of brown sugar and drizzle with maple syrup. Bake open-side up until tender, or until the butter is completely melted if it’s already tender enough. Cut into serving size pieces and serve warm. Alternately you can slice the squash and top with butter, brown sugar, and maple syrup.
