2 cups all purpose flour
1 cup sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 cup apple juice
4 tbsp. butter, melted
1 egg, well beaten
1 1/2 cups fresh cranberries, coarsely chopped
1/2 cup chopped nuts
Preheat oven to 350°F. Grease and flour a 9x5x3 inch loaf pan.
In a bowl, combine flour, sugar, baking powder, salt and baking soda. Stir in apple juice, shortening and egg. Mix until well blended.
Stir in cranberries and nuts. Turn batter into prepared pan, filling about 2/3 full.
Bake for 55 minutes or until a toothpick inserted in center comes out clean.
Cool on wire rack for 15 minutes. Run a butter knife along edges of cake to free the bread from pan.
Brush with melted butter while still warm and sprinkle with coarse sugar.

Cranberry Nut Bread
Luke Sorrells, made this for Christmas while in first grade with Mrs. McWhorter. I have no idea from where the recipe originated. It's very good, and obviously easy enough for a child to make.
