1 1/2 c. flour
2 tsp baking powder
1/3 c. sugar
3/4 tsp salt
1 egg, beaten
1/4 c. oil
1/2 c. pineapple juice
Sift together flour, baking powder, sugar, and salt. Combine eggs, oil, and juice. Mix liquid and dry ingredients. Beat until smooth. Spread in 9" greased pie pan. Sprinkle with topping. Bake at 350 for 35 minutes. Cool 10 minutes before serving. Makes 6-8 servings.
Pineapple Topping
1/4 c. sugar
1 tsp cinnamon
1 Tbsp butter
1/3 c. crushed pineapple, drained
Mix together and sprinkle on cake before baking.
