Ingredients:

Juice of 1/2 grapefruit
Zest and juice of 1 lime
4 Tablespoons butter
2 t chili powder
6 sprigs fresh Dill Weed
1 1/2 lbs fresh salmon filet, skin on
salt and pepper to taste

Directions:

Turn oven to broil. Place heavy metal baking sheet with sides in oven.

In small sauce pan combine grapefruit juice, lime zest and juice, butter and chili powder.
Whisk until butter is melted. Remove from heat.

Take pan out of oven and pour 2 T Olive oil on pan. Be careful as pan is very very hot. Place salmon skin side down. With a very sharp knife score salmon with diagonal cuts every 2 inches about 3 inches long. Only go down about 1/2 inch deep.

Pour juice mixture slowly over salmon. Salt and pepper to taste. Return pan to oven and cook for 12 minutes turning pan after 6 minutes.

At 9 minutes scatter fresh dill weed over fish and return for remaining time.

Take out and enjoy.

Cooks Notes: By scoring the fish, the grapefruit and lime juices soak in the meat and with every bite you can taste the freshness of the fruit.
