Boiled Dry Fava Beans

Serves 8-10

Ingredients:
1lb dry fava beans, soaked overnight
1-2 packages of pita bread
Salt to taste
2-3 tsp peppermint powder
1 onion or bunch of spring onions

Soak dry beans overnight, crisp bread/leave out overnight
Rinse the beans, put them in a large pan, fill with cold water and bring to a boil. Boil slowly on medium heat until beans are soft. (1 hour or so)

Add salt 15 minutes before turning off heat. Ensure enough sauce left in pan to soak the bread.

Cut bread into pieces. Soak dry bread in sauce for 1 min. Take out, put in shallow bowl, adding beans on top.

Heat cooking oil until smoking hot, pour over beans.

Liberally sprinkle peppermint powder all over. Slice onion and place on top or fry the rings in vegetable oil and pour on top.

Serve with sliced tomatoes and cucumber and tea.
