Cream Cheese Bars

***Bars***
- 1 box (18.25 ounce size) yellow cake mix
- 1/2 cup butter, melted
- 1 large egg
***Filling***
- 8 ounces cream cheese, softened
- 1 pound confectioners' sugar
- 3 large eggs
- 1 teaspoon vanilla extract
Preheat the oven to 350 degrees F. Grease a 9x13 baking dish. In a bowl, stir together the cake mix, melted butter, and egg. Mix well then press the crust mixture into the bottom of the greased baking dish. In a mixing bowl, combine the cream cheese, confectioners sugar, eggs, and vanilla. Mix on medium speed with an electric mixer until smooth. Pour the cream cheese mixture over the crust and spread evenly. Place the baking dish in the oven and bake at 350 degrees F for 45 minutes or until the top is lightly browned. Remove the pan from the oven and let cool on a wire rack before cutting into squares. Store leftovers in the refrigerator in a covered container for up to 4 days.
