Roast Pork With Apple Pistachio Dressing

4 pounds boneless loin of pork
2 teaspoons salt
1 teaspoon each, ground: black pepper and ginger
1 cup finely chopped onion
1 cup dry white wine
3 tart apples, peeled, cored and diced
5 cups dried cubed bread
4 eggs
1 cup milk
3/4 cup pistachios

Remove pork from refrigerator 1 hour before roasting. Trim loin of excess fat. Rub surface with salt, pepper and ginger. Place in a shallow roasting pan that will hold roast with no more than 3 to 4 inches of space between roast and sides. Don't use a rack.

Roast pork 25 minutes at 450 degrees. Add onion and roast 5 to 10 additional minutes, until onions are lightly browned. Add wine, apple and bread to pan and roast 25 minutes, stirring occasionally. Beat eggs and milk together and stir into mixture in roasting pan. Stir in pistachios. Roast 25 more minutes or until pork is done. (Center of
pork should register at least 160 degrees on a meat thermometer.)
Serves 6.
