Greek Pasta
8 ozs. uncooked penne pasta
1 14.5 oz. pasta-style chunky tomatoes
1/4 cup white wine
1 2.25 oz. can sliced ripe olives, drained
1/4 cup olive oil
1 clove garlic, minced
1/4 to 1/2 cup crumbled feta cheese
Cook pasta according to package directions omitting salt and fat and drain.
Meanwhile, combine tomatoes, wine and olives in a medium saucepan. Bring to a slow boil over medium heat for 3 to 5 minutes. Combine olive oil and garlic in a small bowl. Microwave on High for 30 seconds.
Place pasta in serving bowl and pour garlicky olive oil over it and toss gently. Add tomato mixture and feta cheese. Stir well, and serve immediately.
Serves 3 to 4.
