Serves 8

8 large onions, peeled
3/4 cup Brazil nuts, finely chopped
1 1/2 cup cooked wild rice
2 Tbsp lemon juice
1 egg, slightly beaten
1 tsp salt
1/2 tsp pepper
1/4 cup bread crumbs
1 Tbsp butter
paprika

Remove slice from tops of onions. Cook onions in boiling water in saucepan for 30 minutes or until almost tender. Scoop out centers leaving 1/4- 1/2 inch thick shells. Place in shallow baking dish. Combine nuts, wild rice, lemon juice, egg, salt and pepper in bowl; mix well. Spoon into onion shells. Mix crumbs with butter. Sprinkle crumbs and paprika over onions. Add a small amount of water to baking dish. Bake at 375 F for 30 minutes or until browned.
