Serves 6
4 (4 oz) cans whole green chilies, drained and rinsed
1/4 lb Pepper jack cheese, sliced into 1/2 inch thick strips
2 cup cooked turkey, sliced into 1/2 inch strips
1/2 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup milk
3 eggs
2/3 cup shredded Cheddar cheese
Slice chilies up one side; remove seeds and spread open flat. Arrange in a greased 11x7 inch baking pan. Fill each chile half with Pepper jack cheese and turkey strips. Fold chiles closed and place seam side down in dish. In a medium bowl, combine flour, baking powder and salt. Whisk together milk and eggs; slowly add to flour mixture, beating until smooth. Pour over chiles. Bake at 450 degrees for 15 minutes. Remove from oven and turn off heat, Sprinkle Cheddar cheese over top and return to oven until cheese is melted.
