Shrimp Gruyere

- 3 tablespoons butter
- 2 tablespoons olive oil
- 1/2 pound sliced mushrooms
- 4 green onions, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon dried chervil, crumbled
- 1 pound shrimp, large, shelled and deveined
- 1/4 cup dry white wine
- 1/4 cup whipping cream
- 2 ounces grated Gruyere cheese
- Freshly cooked wide egg noodles
Melt 2/3 butter with olive oil in large skillet over medium heat. Add mushrooms, green onions, parsley and chervil and saute until mushrooms are tender, 5 to 7 minutes. Add shrimp and saute until just pink, about 3 minutes. Add wine, cover and cook 2 minutes. Remove shrimp and mushrooms using slotted spoon and keep warm. Stir in cream and remaining butter. Bring to boil over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, until sauce thickens. Return shrimp and mushrooms to skillet. Add cheese and stir until melted. Serve over noodles.
