1 pint whipping cream
1/2 c milk
1 teas salt
1/4 teas cayenne pepper
3 pounds gold or russet potatoes 4 or 5 large
sliced thin about 1/8 to 1/4 inch
1/2 lb gruyere cheese shredded (2 cups)

Preheat oven 375. Grease 9 by 13 baking dish.
Combine cream, milk, salt and pepper. Bring to just a boil and add potatoes.
cook 3 or 4 min until start to thicken, stirring occasionally.

transfer half of the potatoes into prepared dish
sprinkle with 1 1/2 cups cheese. Top with remaining potatoes and remaining 1/2 c cheese.

Bake 40 to 45 min or until potatoes tender. If browning too fast, cover with foil.

Let stand at lease 5 min before serving.
