I had this at my favorite restaurant, I was able to recreate it at home. To get the whole effect of pizza, serve with chewy bread sticks!
Serves 6-8
Ingredients

1/2 pound cooked Italian sausage-mild or hot your choice
3 Tablespoons olive oil
8 oz sliced fresh baby bella mushrooms or button mushrooms
1 jar (4oz) of roasted red peppers-chopped
1 medium onion diced small
4 oz pepperoni-diced 1 medium green pepper diced small
1/4 cup diced deli ham
4 oz black olives sliced(optional)
1( 32 oz) jar of your favorite chunky spaghetti sauce.
1/2 teaspoon garlic powder
2 oz julienned sun- dried tomatoes
1 medium tomato diced
1/2 cup chopped fresh basil
1 cup chicken stock
1/2 cup red wine(optional)
1/2 cup chopped fresh spinach(optional
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese –for garnish do not add to the soup)
You can add any of your other favorite pizza toppings to the soup too!

Directions:
1.In a large sauce pan over medium heat add the onions and sauté for 3-5 minutes until they start to brown.
2.Add the sliced mushrooms and pepperoni
sauté an additional 3-5 minutes until they brown.
3.Add fresh diced tomato and cook for 3 minutes.
4.Add 1 cup of chicken stock and stir to get all the brown goodness off the bottom of the pan.
5.Add the rest of the ingredients EXCEPT the mozzarella cheese (this is for garnish).
6.Turn the heat down to simmer and cook for 15 minutes or until the parmesan cheese is melted and the soup is warmed through.
7.Serve with hot chewy breadsticks and grated mozzarella cheese
