One of my catering clients asked for a special pasta dish that wasn't the "same old same old" after some conferring we came up with what became an out of this world pasta dish!

Serves 6-8
Ingredients
8 oz of penne pasta(or your favorite shape)cooked according to the package & drained
1 pound of chorizo or ground turkey, or beef-browned
1 envelope of low sodium taco seasoning
1 cup canned black beans-drain & rinse
1 cup frozen corn & pepper blend
2 cups shredded cheddar,Monterey Jack or pepper jack cheese
16 oz sour cream
1(14oz) can of diced tomatoes with green chiles
2 cups mild salsa
1 cup blanco queso

Directions:
Preheat oven to 350 degrees
1.Lightly spray a 13x9" baking pan with cooking spray.
2. Over medium heat brown the ground meat (you can use a combination of chorizo-which is spicy, and turkey or ground beef)for about 15 minutes stirring occasionally until it is browned and cooked through.
3. In a medium bowl mix the cooked ground meat, pasta and diced tomatoes & green chiles. mix until blended
4.Pour the cooked pasta & meat mixture in the bottom of the baking dish.
5. Sprinkle with 1 cup of the shredded cheese.
6. The next layer is the drained & rinsed cooked black beans.
7. The next layer is the last cup of shredded cheese.
8. The next layer is the frozen corn & pepper
9. Spread the sour cream over the corn & pepper layer.
10.Pour the salsa over the sour cream.
11. Last thing is to sprinkle the crumbled blanco queso over the top-you can also use more shredded cheese to top it off.
12. Bake covered in a 350 degree oven for 30 minutes,after 30 minutes uncover the casserole and return to the oven to brown the cheese.
Serve with warm crusty bread!
