This sandwich can easily be assembled, wrapped in foil and frozen. When you want to prepare them just put them frozen into the oven on low and bake them!
Serves 4
1 (8x8")loaf of focaccia cut into 4 even portions
8 slices deli turkey breast
8 slices sliced smoked deli ham
8 sliced of sliced swiss cheese
1/2 cup of Parmesan Cracked Pepper Dressing
For serving if desired sliced fresh tomatoes, lettuce and sliced red onions.
Directions:
The focaccia will need to be sliced to create a top and bottom piece for your sammie.
1. Start building your sammies by spreading the desired amount of Parmesan Cracked Pepper dressing on both sides of your cut focaccia.
2. Continue to build by stacking 2 slices of swiss cheese one on the top piece of focaccia, one on the bottom piece.
3. Then place 2 slices each of ham & turkey breast on each 4 bottoms of the focaccia.
4. Place the top on the sammie.
5. At this point you can individually wrap each sammie and freeze.Remember to spray or butter both the top and bottom crust of the sammie so it doesn't stick to the foil.
6. To cook, place a grill pan or large skillet over medium heat.
7.Spray or butter the top of the sammie and place it top side down into the pan.
8.Cook for about 3 minutes pressing down on each sammie with a sturdy pancake turner to "smoosh/flatten" them panini style
9.Spray or butter the other side of the sammie before you turn it.
10. When the sammie begins to brown, cheese starts to melt, flip it over carefully.
11. Brown on the other side, again pressing it with a sturdy spatula.
12. When the sammie is browned and the cheese is melted it's ready to serve!
Note: if you can't find the Parmesan Cracked Pepper Dressing you can easily make it with
1 cup of Ranch dressing, 1/4 cup grated parmesan cheese, 1 teaspoon cracked peppercorns (or too taste). Mix well and refrigerate until ready to use.
To bake: wrap individually in foil and bake in a preheated 400 degree oven for 20 minutes or until the sammie is browned & crunchy on the bottom.
