  • 1 1/4 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 egg
  • 3/4 cup milk
  • 2 tablespoons decorative sprinkles
  • vanilla, chocolate or other frosting, as desired

Preheat the oven to 350 degrees F. Grease a muffin tin or line it with papers.

Combine the flour, sugar, baking powder, and salt in a bowl. In a large mixing bowl, combine the butter, vanilla, and egg. Beat on low speed with an electric mixer until smooth. With the mixer running, alternate adding the flour mixture and milk until well mixed.

Fold the sprinkles into the cupcake batter.

Fill the muffin tins 3/4ths full with the cupcake batter.

Place the cupcakes in the oven and bake at 350 degrees F for 20 minutes or until they test done when a toothpick is inserted in the middle.

Remove the cupcakes from the oven and let cool for 5 minutes in the pan. Remove the cupcakes to a wire rack to cool completely.

Frost the cooled confetti cupcakes as desired. Store the cupcakes in an airtight container.
