Makes 6 servings.

1 cup long grain white rice
1 tablespoon vegetable oil
1 clove garlic, minced
1/2 onion, finely chopped
1/2 green bell pepper, finely chopped
1 fresh jalapeno pepper, chopped
1 1/2 cups chicken broth
1 tomato, seeded and chopped
1 T. chicken bouillon powder
3/4 teaspoon ground cumin
salt and pepper
1/2 cup chopped fresh cilantro

In a medium sauce pan, saute rice, garlic and onion in oil over medium heat for about 3 minutes, or until rice is browned and onion is translucent.
Add green pepper, jalapeno, and diced tomato.
Pour in chicken broth and bring to a boil; add bouillon powder and cumin
Season to taste with salt and pepper.
Bring to a boil, cover and reduce heat to low.
Simmer for 20 minutes; turn off heat and, using a fork, fluff rice and stir in cilantro.
Replace cover and let stand 10 minutes to absorb excess liquid before serving.
