Makes 12 servings.

1 c. graham cracker crumbs
1/2 c. finely chopped pecans
3 T. granulated sugar
1/2 tsp. ground cinnamon
1/4 c. unsalted butter, melted

2 (8 ounce) packages cream cheese, softened
1/2 c. granulated sugar
2 eggs
1/2 tsp. vanilla extract
4 c. apples - peeled, cored and thinly sliced
1/3 c. granulated sugar
1/2 tsp. ground cinnamon
1/4 c. chopped pecans

Preheat oven to 350F; spray a 9-inch spring-form pan with cooking spray.
In a medium bowl, combine graham crumbs, 1/2 cup chopped pecans, 3 tablespoons sugar, 1/2 teaspoons cinnamon and melted butter with a fork and mix well; press evenly into bottom of pan.
In large bowl beat cream cheese and 1/2 cup sugar with electric mixer speed until smooth.
Add eggs one at a time, beating well after each addition; stir in vanilla.
In a small bowl, stir together 1/3 cup sugar and 1/2 teaspoon cinnamon; toss with sliced apples to coat.
Spoon apple mixture over cream cheese layer and sprinkle with 1/4 cup chopped pecans.
Bake at 350F for 60 minutes, or until center appears nearly set; cool in pan on wire rack for 30 minutes.
Run knife around inside edge of pan to allow cheesecake to settle evenly.
Let stand in pan on wire rack until cooled completely; remove side of pan.
Refrigerate at least 4 hours or overnight before serving.
