Makes 4 servings.
1/2 c. olive oil
1 tsp. minced garlic
1 T. Dijon mustard
1 T> mayonnaise
5 c. mixed vegetables (chopped broccoli florets, zucchini, yellow squash, red pepper and carrots
1/4 c. butter
salt and pepper
8 chicken breast fillets
Tomato Salsa
Blend olive oil, garlic, mustard and mayonnaise well
Spoon over chicken breasts and marinate for 1 hour, turning chicken occasionally.
Grill until tender.
Steam vegetables until tender crisp; toss with butter; season with salt and pepper to taste.
Top chicken with Tomato Salsa and serve fresh vegetables alongside.
