Makes 1 1/2 cups.
2 large onions, finely chopped
2 c. chicken broth
2 cloves garlic, minced
1 small bay leaf
1/4 tsp. dried thyme
1 tsp. red wine vinegar
1 c. sour cream
salt and pepper
In 2-quart saucepan, combine onions, broth, garlic, bay leaf and thyme; heat to boiling over high heat.
Reduce heat and cook until liquid has almost completely evaporated, about 25 minutes.
Transfer mixture to a medium bowl; remove bay leaf and stir in vinegar. Cool to room temperature.
Stir in sour cream; season with salt and pepper.
Cover and refrigerate overnight before serving.
