  • 5 pounds potatoes
  • 3 eggs, hard boiled and peeled
  • 2 green onions, finely chopped
  • 1 onion, finely chopped
  • 1 1/4 cup mayonnaise
  • 1 1/2 tablespoon yellow mustard
  • 2 1/2 tablespoons Creole mustard
  • salt and pepper, to taste

Place potatoes in a large pot and boil until done. (About 20 to 25 minutes). When done remove from pot and let cool while preparing dressing.

Mix mayonnaise, mustards, salt and pepper; add to this the finely chopped onions. Stir well.

Peel potatoes and chop into small pieces. Dice the hard-boiled eggs and add to potatoes. Place in a large bowl and smooth dressing over potatoes and eggs evenly. Gently turn until all potatoes are uniformly moist. Pack down in bowl. Garnish with paprika. Refrigerate until ready to serve.
