Creole Potato Salad

Ready in: 1-2 hrs
- 5 pounds potatoes
- 3 eggs, hard boiled and peeled
- 2 green onions, finely chopped
- 1 onion, finely chopped
- 1 1/4 cup mayonnaise
- 1 1/2 tablespoon yellow mustard
- 2 1/2 tablespoons Creole mustard
- salt and pepper, to taste
Place potatoes in a large pot and boil until done. (About 20 to 25 minutes). When done remove from pot and let cool while preparing dressing. Mix mayonnaise, mustards, salt and pepper; add to this the finely chopped onions. Stir well. Peel potatoes and chop into small pieces. Dice the hard-boiled eggs and add to potatoes. Place in a large bowl and smooth dressing over potatoes and eggs evenly. Gently turn until all potatoes are uniformly moist. Pack down in bowl. Garnish with paprika. Refrigerate until ready to serve.
