Ingredients

4 1 inch thick bone in pork chops
4 piece of bacon (chopped into 2 inch pieces)
1/4 Cup chopped onions
3 chopped cloves of garlic
1 Cup cornbread stuffing
1/2 Cup Water
1/2 -3/4 Cups Shredded Cheddar Cheese
Pork Rub (or Season Salt, Pepper, and Paprika)


Heat oven to 350 degrees.

Fry bacon in 12 inch skillet over medium heat until crisp.

Add onions and garlic cloves to bacon and grease and fry until browned.

Take off heat add stuffing and water to bacon, onions, and garlic stir until stuffing is moist.

Stir in cheese until well mixed.

Cut pocket in Pork Chop.

Generously cover with pork rub (or other seasonings) and rub in.

Stuff pork chops with stuffing.

Over medium heat in the same skillet brown both sides of the pork chops.

Place pork chops in a 9X13X2 inch pan and cover with foil.

Bake 45 minutes covered. Then, uncover and bake for 15 more minutes.
