Extreme Blueberry Muffins

Streusel Topping

1/4 Cup all-purpose flour
1/4 Cup packed brown sugar
1/4 teaspoon ground cinnamon
2 Tablespoons firm butter or stick margarine


Mix flour, brown sugar, and cinnamon in medium bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until crumbly.


Extreme Blueberry Muffins


3/4 Cup milk
1/4 Cup vegetable oil
1 large egg
2 Cups all-purpose flour
2/3 Cup sugar
2 teaspoons backing powder
1/2 teaspoon salt
2 Cup frozen blueberries


Heat oven to 400 degrees

1. Beat milk, oil and egg in large bowl with fork. Stir in flour, sugar, baking powder and salt until flour is moistened (batter should be lumpy). Stir in blueberries.

2. Evenly spread battering into muffin pan (either greased or with paper liners).

3. Sprinkle evenly with streusel topping. Until golden brown.

4. Bake 20-25 minutes. Check center with a toothpick if nothing sticks then they are done.

Makes 12 muffins
Takes about 10 minutes for preparation.
