Dairy-free Cream of Broccoli Soup

For those of you who need to avoid dairy and soy, but still crave a creamy soup, this recipe is amazing!
2 cups sliced onions
2 Tbsps olive oil
4 cups liquid ( water, vegetable or chicken stock)
plus 1-3 cups
1/2 cup uncooked white rice
Salt and pepper
2 large heads broccoli
Salt and pepper (preferably white pepper)
Lemon juice
Dash hot sauce
Sauté onions in oil slowly until tender and translucent
Add rice and liquid. Simmer 20 minutes until rice is tender.
Meanwhile, prepare broccoli: Reserve approx 1 cup tiny branches and bud ends of broccoli
Chop rest of broccoli, peeling and chopping stems into 1/4 inch slices. Steam broccoli 4-5 minutes until tender but still bright green. Drain and reserve cooking liquid.
Puree onion and rice mixture in food processor, adding more liquid as needed, till smooth and creamy. Return all but 1 cup to saucepan. Add cooked broccoli to food processor with reserved soup base, and purée until smooth. Combine into saucepan with rest of soup base. Add salt , pepper, lemon juice, and dash of hot sauce to taste. Add extra liquid (water or stock) till soup is desired consistency
Steam reserved broccoli in the original cooking liquid 2-3 mins. Drain liquid into the soup, stir, and use broccoli bits as garnish.
*Rice and onion soup base can be used as base for other vegetables: try carrots with dill, zucchini and tarragon etc. Cream, milk or sour cream can be used if desired.
