Ricotta Cookies

2 sticks butter
2 c sugar
3 eggs
1 lb ricotta cheese
2 t vanilla extract
1 T almond extract
4 c flour
1 t baking soda

Cream together butter & sugar. Add eggs, ricotta, vanilla and almond, mix well.
Mix flour and soda separately, add to rest gradually until incorporated.

Drop by teaspoonfuls onto cookie sheet.
Bake at 350 6-8 minutes, depending on size of cookies until bottom of cookies are lightly golden. (the tops may still look a little undercooked)

Remove to cooling racks. Frost when cookies are completely cool.

Frosting
3/4 c butter
3 T milk
3 C powdered sugar
1 T almond extract

Mix together. Add food coloring (red or green and frost cookies) I usually divide in half and do 1/2 of cookies green and 1/2 red.

Store in refrigerator.

Makes approx 100 small cookies or 50 large.
