Lemon Bars
Category: Desserts
Crust:
1/2 lb margarine or butter, softened
2 C sifted flour
1/2 c sifted confectioners sugar
Mix with electric mixer until crumbly dough. Press into 9x13 inch ungreased pan. Bake at 350 for 15 mins
Filling:
4 eggs beaten lightly
1 t baking powder
2 c granulated sugar
4 T lemon juice (or more to taste)
1 T grated lemon peel
4 T flour
Mix together and pour over baked crust. Bake at 350 for 25 mins or until top is a golden brown crust and custard is set. Sprinkle with confectioners sugar. Cool and cut into 1x2" bars. Can be frozen.
Mrs. Eipper led small group bible studies for high school girls after school. She always baked goodies for her husband and us girls, despite the fact that due to her health she could not eat any sugar. These lemon bars were our favorites.
