Stuffing with Chopped Apples

Category: Holidays

Ingredients:
1 cup chicken broth (use vegetable broth or water to make this vegetarian)
1/2 cup chopped celery
1/3 cup chopped onion
4 tablespoons butter
1/2 teaspoon salt
4 cups dry bread cubes, about 8 slices (or use stuffing mix and skip the spices and herbs listed here)
1 medium apple, peeled, cored, and finely chopped, about 1 to 1 1/2 cups
1/4 cup dried cranberries
1 teaspoon ground sage
1/8 teaspoon pepper

Preparation:
In a small saute pan over medium-low heat, melt the butter. Add celery and onion and saute, stirring, until vegetables are tender, about 5 minutes. Add the chicken broth and salt; cover and bring to a simmer.
In a large bowl combine the bread cubes, chopped apples, chopped pecans if using, sage, and pepper. Add the broth and vegetable mixture and stir until well moistened. Turn into a 1 1/2-quart shallow casserole. Cover tightly with foil and bake at 350° for 25 to 30 minutes. Or, stuff the cavity of an 8- to 10-pound turkey just before roasting.

This is a small quantity- for holiday I would double or triple quantities
