Ingredients

1 pack Chuka Soba Noodles (6 oz)
6 cups water
3 cups thinly sliced stir fry vegetables (Red Cabbage, Grated Carrot, Green,Red,Yellow Peppers, Red Onion, Scallions, Baby Corn, Peas, Broccoli, green beans)
1 tbsp grated Ginger and Garlic
4 tbsp Oil (Canola or Sesame)
1/2 tsp sesame seeds
1 thinly sliced jalapeƱo
5 tbsp soy sauce
3 tbsp red chili sauce(Sriracha)
Salt to taste
Directions

1. Take 6 cups of water and add salt to it. Allow the water to come to a boil.
2. Add 1/2 tsp oil to the boiling water and then add the noodles.Allow the noodles to boil for 3-4 minutes
3. Drain the noodles, add 1 tsp oil and toss the noodles so they don't stick.
4. Heat 4 tbsp of oil in a wok on medium flame.
5. Add the grated ginger, garlic, sesame seeds, jalapenos and fry it until it turns light brown.
6. Add the veggies and stir fry it for around 5 min until the veggies get a shiny glaze.
7. Reduce the flame to low and add salt, Soy Sauce , Chili Sauce and saute for 2 min.
8. Pour the above vegetable mix above the noodles and toss the noodles and the mix.
9. Serve hot.
