Ingredients
Oil for frying
For outer Shell:
2 packs of Goya Discos(turnover pastry sheets)
For the Stuffing:
3 bunches cilantro leaves chopped coarsely
1/2 cup dessicated coconut
1/2 cup coarsely ground peanuts
1/2 cup coarsely ground nuts (cashew nuts, walnuts, peacans)
1/4 cup raisins.
2 tsp oil
1 1/2 tsp red chilly powder
1/2 tsp turmeric powder
1 tsp lemon juice
1 tsp cumin seeds
1 tsp coriander powder
salt to taste
Directions:
1)Keep the Goya Discos( turnover pastry sheets) outside for thawing.
2) Coarsely ground the nuts
3) Coarsely ground the peanuts and add the dessicated coconut and mix them together and keep aside.
4)Add 2 tsp of oil to a pan and add cumin, ginger paste & asafoetida.
5) After the cumin starts sizzling, keep the gas on low heat.
6)Add salt, turmeric,chilly powder & coriander powder in the mix..
7) Add coarsely grounds peanuts,coconut, nuts and mix the stuff on medium heat for 2-3 mintues.
8) Add the chopped cilantro leaves and mix the complete stuffing until the cilatro leaves start to wilt.
9) Remove the pan from fire and add lemon juice & raisins.Let it cool for sometime.
10)Heat oil for deep frying in a pan.
11) keep a glass of water for help with pastry sticking purposes on the side
12) Take a pastry sheet and apply water around the edges of the sheet with teh tip of your hand.
11)Spread spoonful mixture of the stuffing on each disc & make a roll of it. stick the ends by applying more water.
12)Repeat the same procedure for remaining sheets.
13)Deep fry all rolls until become golden brown.
Serve it with Green Chilli chutney or Mint chutney and Tamarind chutney.
